Paleo Banana Chocolate Chip Muffins

It’s been a hot minute since I’ve shared a recipe with y’all – so I’m excited to finally have one to share! My problem is, I always throw stuff together and it turns out good and then I can never remember what all I put in the recipe. 

Banana bread and banana muffins are one of my favorite things to make because it’s practically foolproof and it’s so easy to remove or add to it to customize. Meaning, if you’re doing a Whole30, you can omit the chocolate and coconut sugar and add some pecans for some more taste. Like I said – so easy! 

Paleo Banana Chocolate Chip Muffins
Ingredients
  • 2 ripe bananas
  • 1/2 tsp salt
  • 1/2 tsp vanilla extract
  • 1/2 tsp baking soda
  • 2 eggs
  • 1/2 cup coconut flour
  • 1 tbsp coconut sugar (omit on whole30)
  • 1 tbsp avocado oil
  • 1/2 cup enjoy life chocoate chips (omit on whole 30)
Instructions
  1. Pre-heat the oven to 350.

    Mash the bananas until smooth

  2. Add eggs, oil and vanilla extract

  3. Add the rest of the ingredients and mix extremely well

  4. Add to a muffin tin (make sure to spray with a little bit of oil so they don’t stick)

  5. Cook for 15 to 20 minutes

  6. Cool and enjoy!
