Whole30: Week 1 meal plan

I’m excited and nervous for Whole30 to get started. I recently stumbled across the blog, Meals We Steal. They base all their meals for the week based on what is on sale at their local sprouts. Isn’t the brilliant?! I decided to see what was on sale at my local Sprouts and see what Whole30 meals I could come up with.

Meal plan for Jan. 9 – 13

Monday

Breakfast: Prosciutto egg and spinach cup, avocado and coffee with cashew milk. The avocados where on sale for 3 for $1, so I got 6 of them.

Lunch: Pulled pork (compliant from Costco), potato and salad.

Dinner: Shrimp boil (I plan to use this recipe, but make it Whole30 by using ghee instead of butter and replacing the corn with mushrooms.) The shrimp was on sale for $6.99/lb. I got 1.5 lbs so I’d have plenty for leftovers. The potatoes were on sale for $2.98 for a 5 lb bag.

Tuesday

Breakfast: Prosciutto egg cup, avocado and coffee with cashew milk.

Lunch: Leftover shrimp boil

Dinner: Leftover shrimp boil

Wednesday

Breakfast: Wildway hot cereal (original is my favorite) + granola and coffee with cashew milk.

Lunch: Cobb salad

Dinner: Pot roast + veggies (Recipe from Paleo Cooking with your Instant Pot, pg. 56.) The rump roast was $3.99/lb. I ended up getting one around 2 lbs. The carrotts were on sale for $2.98 for a 5 lb bag.

Thursday

Breakfast: Prosciutto egg cup, avocado and coffee with cashew milk.

Lunch: Pot roast + veggies

Dinner: Pizza Spaghetti Pie (I ended up not making this last week.)

Friday

Breakfast: Wildway hot cereal + granola and coffee with cashew milk.

Lunch: Pizza Spaghetti Pie

Dinner: Leftovers

I don’t plan out the weekends because I’m normally at home and it’s easy for me to pull something together.

Other random buys

  • Bell peppers were 4 for $5. So I bought those as a vegetable to add on to any meal.
  • Kombucha (Sprouts brand) was 2 for $4, so I decided to get 2. I’ve never tried the Sprouts brand. So I look forward to seeing if it’s good.
  • Almonds & cashews. I always have these on hand to add as a fat to any meal.

Let me know if you’ve made any of these recipes! I have been nervous to use my instant pot (because I’m a tad bit scared of blowing it up), but I think this cookbook will help me use my IP more! I’m really hoping that Whole3o won’t be as stressful as it has been in the past, since I’ve actually planned out this week pretty well and I’m not just winging it.

Happy Whole30 y’all!
