Whole30: Week 3 Meal Plan

How is it already week three? How is January almost over?! Like…wasn’t New Year’s yesterday? Once again, I made way too much and ate leftovers almost everyday. This week, my goal is to be better about making food portions for the week. Unfortunately, my workouts didn’t go as planned last week. I have tons of excuses (rain, bad sleep, laziness), but I need to stop with the excuses and just get my workouts done. I always feel so much better after a workout and I need to remember that.

Meal plan for Jan. 23 – 27

Monday

Breakfast: Prosciutto, sweet potato, egg and spinach cup, avocado and coffee with cashew milk.

Lunch: Pizza spaghetti pie from PaleOMG. FINALLY made this and it’s so good y’all (photos above).

Dinner: Pizza spaghetti pie.

Workout: Camp Gladiator at 6:45am and possibly a Sonic Hot 60 yoga class in evening.

Tuesday

Breakfast: Wildway hot cereal.

Lunch: Pizza spaghetti pie.

Dinner: Instant pot apple pork tenderloin (I’m making this recipe from scratch and plan to share if it’s good!)

Workout: Yoga or walking Gundy. We’ll see how the weather is.

Wednesday

Breakfast: Prosciutto, sweet potato, egg and spinach cup, avocado and coffee with cashew milk.

Lunch: Chili on top of a salad.

Dinner: Pork sausage with vegetables.

Workout: Camp Gladiator at 6:45am

Thursday

Breakfast: Wildway hot cereal.

Lunch: Pork leftovers on bed of lettuce.

Dinner: Pork and vetables.

Workout: Rest day.

Friday

Breakfast:Prosciutto, sweet potato, egg and spinach cup, avocado and coffee with cashew milk.

Lunch: Leftovers

Dinner: Leftovers

Workout: Camp Gladiator at 6:45am

Side note: I don’t plan out the weekends because I’m normally at home and it’s easy for me to pull something together.

I’ve done really well at meal prepping this round of Whole30 and I truly believe it’s because I share this meal plan with y’all. By sharing it with everyone and writing it down, it makes me stay accountable. Yes, I don’t follow this meal plan perfectly, but I don’t stray very far. Normally, it’s because I made too much and have to eat leftovers (anyone see all my chili pictures last week?).

I hope you all have a great week! It’s a pretty calm week work wise – so I’m looking forward to getting a lot of stuff done!

    Yum!! These all sound like delicious recipes, I’ve been looking into Whole30 for a while and it definitely sounds do-able.
